Fruit and vegetable powders in industrial bakery premixes
Fruit and vegetable powders provide flavor, color and dry fruit solids without introducing the quantity of water associated with puree, juice or frozen fruit. They are therefore useful in industrial cake mixes, muffin mixes, cookies, pancakes, waffles, bars, fillings, coatings and other bakery systems built around dry premixing.
Powder type is important. Freeze-dried whole-fruit powder, spray-dried juice powder and other dried formats can differ considerably in carrier content, particle size, bulk density, flowability, fruit intensity and water behavior.
The commercial specification should therefore define what the powder is made from and how it was processed rather than relying on the fruit name alone.
Define the powder function before the oven trial
Decide whether the powder is intended primarily for fruit flavor, fruit-derived color contribution, acidity, visible fruit solids or a combination of these functions. This determines which technical characteristics require the tightest control.
